Soft Moroccan-Style Buns with Spiced Meat and Veggies

These savory rolls are a staple of Moroccan tea time and Ramadan tables. They feature a soft, pillowy dough stuffed with a flavorful mixture of minced meat, sautéed vegetables, and traditional spices.
🛒 Ingredients
🥣 The Dough: 500g All-purpose flour + 🥛 1 cup warm Milk + 🧈 2 tbsp Butter + 🧬 1 tbsp Yeast + 🧂 Salt & Sugar.
🥩 The Protein: 300g Ground Beef or 🍗 Finely chopped Chicken breast.
🧅 The Veggies: 2 Onions (finely chopped) + 🫑 Bell Peppers (Red & Green) + 🥕 1 grated Carrot.
🏺 The Spices: 🟡 Turmeric + 🔴 Paprika + 🌶️ Cumin + 🧂 Salt & Black pepper.
🌿 The Finish: 🥗 Fresh Parsley + 🧀 Grated Cheese (for extra melt).
🎨 The Glaze: 🥚 1 Egg yolk + 🥨 Nigella seeds or Sesame for topping.
👨🍳 Preparation in 3 Main Steps
1. Preparing the Savory Filling 🍳
In a large pan, sauté the onions 🧅 and peppers 🫑 in olive oil 🫒 until soft. Add the minced meat 🥩 and break it apart. Season with paprika 🔴, cumin 🌶️, and salt. Stir in the grated carrot 🥕 and finish with fresh parsley 🌿. Let the filling cool completely before stuffing.

2. Kneading & Shaping the Rolls 🥐
Mix the flour 🥣, milk 🥛, and yeast 🧬 until you have a soft, elastic dough. Let it rise for 45 minutes. Divide into small balls. Flatten each ball, place a generous spoonful of the filling 🥩 and cheese 🧀 in the center, and pinch the edges together to seal it into a neat round roll.
